disabling low setting on aquastat

I put in a gas water heater this summer and disconnected my domestic hot water loop. I turned the low and diff settings as far down as possible, but is there a way to disable it completely? I read elsewhere to cut and cap the "blue" wire, but don't see my exact model and sorta see two blue wires.

Best to replace it with a modern aquastat that features circulator hold of to prevent cool water returning to the boiler and condensing.
Although it's done, I don't recommend cutting and capping (modifying) any wire in a UL listed safety control. You assume all liability in the event of something going wrong (fire/flood, etc.).There was an error rendering this rich post.
