What is the rule of thumb on outside temperature and setting the aquastat temperature on my wood boiler. When it gets in the natives should I set it higher than 180 degrees?

I wouldn't run hotter then 180. It gives you a little bit of buffer room for it to over shoot.
I installed one at my parents they are currently running 170 supply with no problems. Seems to be working great so far with those temps. Only in the really cold days you may need it to be set for 180.

Which wood boiler do you have? A lot of the temp settings would be based on your heating emitters out put and style system you have.
Also how many btus your house needs.

Buffer tank & ODR mixing on the distribution side.

It's a mahoning model 200 multi-fuel unpressurized and feeding 2 water to air heat exchangers. 300 square foot Ranch house.

Do you guys recommend going with a 5 degree temp drop before the blower comes on or more?
So 180 temp then blower would refire the wood at 175

I would run a 10 degree diff. See how that goes.
If you drop the diff too much your return temps could drop to low you can run into problems.
