summer winter hookup How to shut it off permanently

We have an old oil heater with a summer winter hookup. Years ago someone hooked up a gas hot water heater but they never shut off the circuit to the oil heater. Therefore, even when the oil heater is not heating oil for house heat, it is switching on for a minute or two, to heat the water [that is no longer in use].

I would like to know hot to permanently switch off the water heater part of the oil heating unit, so we're not wasting oil when we aren't heating the house.

That boiler and wiring is older than dirt.

Turn the control with the two yellow wires going into it down to 120 degrees in June or whenever get gets warm enough so that you don't need heat, and turn it back to the 160 degrees it is set at now and leave it at that in the fall when you need heat. Anything more complicated will cost you more to do than you will save.
