How does one determine whether a pressuretrol is working? I don't trust the internal siphon readings

Depends on what you mean.
If you want to see if the pressuretrol itself works, tip the metal rocker inside back and forth while the thermostat is calling for heat and see if the burners cut off and on. To see if it's operating by pressure, set it as low as possible--both the cut-in and differential--and see if it moves when the boiler develops pressure. If you can't tell if there is any pressure, you need to get a gauge you can trust.
Or you can just remove the pigtail and see if you can blow through it.Just another DIYer | King of Prussia, PA
