Boiler shut down

I have to remove a 12" 90 on the smoke pipe for a steam boiler and change it to a tee, reduce one side of the tee to 4" and tie in a gas fired water heater. How long can I have the boiler down without affecting it? It's an older house (go figure) with one zone.

Shouldn't be an issue to shut down. Just make sure what you want to do is code legal in your area........0
