We changed out the expansion tank, fill valve and relief valve and the boiler is still blowing for!! What gives! The boiler is running at 20lbs so I don't know what else we could do. It blows off every few days.

Bad gage, bad DHW tank...
Gages lie on a regular basis. You may also have a bad coil that is letting the water leak into the heating system and causing the relief valve to relieve the excess pressure.
I've also seen the diaphragm stick to the face of the expansion tank and not allow any expanding water into the tank.
Try putting another gage on the drain cock and see if it corelates with the boiler T&P gage. If not, replace the boiler T&P gage,
If there is DHW heating function., try turning the water supply to that off and see of the boiler quits relieving itself. If it does, your coil has sprung a leak.
