calorstat?

I just recently installed a chappee wood boiler in my garage and it has a calorstat on it...how exactly does it work? I'm guessing it just opens and closes the damper door based on temperature, but what controls the target temperature? and does it need to be powered or is does it have some sort of bi-metal that twists on temp? it is a model c-28 boiler, not sure if anybody is familiar with that one or if better yet somebody could point me in the direction of a manual but any help would be appreciated! btw I am in the hvac trade so feel free to get technical.
