Splicing Shielded sensor wire

When running 24 volt 2 wire shielded sensor wire (the grey insulation - think outdoor reset sensor, indirect sensor, etc.) can you extend it with merets or butt connectors like you can with standard 24 volt brown t-stat wire or does it have to be intact full wire from destination to destination?

As long as you maintain ALL conductors...
INCLUDING the shield, it should not be an issue. Even with shielded, it is not recommended that the wire be run in parallel to any high voltage wires due to possible induction issues.
MEIt's not so much a case of "You got what you paid for", as it is a matter of "You DIDN'T get what you DIDN'T pay for, and you're NOT going to get what you thought you were in the way of comfort". Borrowed from Heatboy.0
