Dehumidify mode on mini split

I have a Samsung inverter mini split that works really well, but I have a question.
What takes place on the dehumidify mode? I thought that it was just slowing down the fan speed but it has to be more than that because I can manually put the fan on low in the cool mode and it doesnt remove near the amount of water it does on dehumidify.

Sensors are utilized to monitor air temp, coil temp, and humidity. The objective is to extract humidity while maintaining room temp within 2F. The compressor is either slowed or briefly run to inject just enough freon to keep the evap coil below the dew-point while the fan is run at low speed. Normally this means a short run-time for the compressor with several minutes of air-across-the-coil before the compressor injects another 'mist' of freon.0
