Different types of oil nozzles?

Can someone explain the different types of oil burner nozzles to me?  I am NOT going to mess around with the burner, but I just want to know what the different types are and how one would know what type you are supposed to use.  I'm the type of home owner who wants to have enough knowledge to know if the people working on his stuff know what they are doing :)
