PEX for cast iron baseboards

I'd like to replace my big cast iron radiators for cast iron baseboards and redo the supply and return lines at the same time. Can I use PEX oxygen barrier for this? I'd also like to put in two zones and I was thinking of using 3/4 inch PEX but most of the manifolds I see appear to be 1/2 inch. Will 1/2 inch be an adequate supply?
Also, if the baseboard costs don't break me, I'd also like to install a direct vent high-efficiency gas boiler to replace my 20-year old Carrier...any recommendations?
