Valves on Steam Mains

Hi all. First time posting. My home steam system (gas fired boiler) has three different zones. Each zone is controlled by a separate thermostat, and each steam main has a cut-off valve (I think a solenoid valve but not sure) that can stop steam at the base of the main. The thermostats control the valves.

My understanding from reading Dan's "We Got Steam Heat" is that these type of valves are not good in a steam system. Can someone confirm?

I already put the two primary zones on the same thermostat, because we got a lot of hammer when only one zone was open. The other zone is a rarely-used room and we usually just keep it closed. I'd be willing to remove the valves and just have one "zone" encompassing the whole house if that is what makes sense, but looking for some guidance.

Thanks!
Tim
