Have one left over zone on myTaco zone control panel and want to know if I could use it to power the fans on two hot water unit heaters in my garage. I already ran stat wires and connected a seperate zone valve to it for the heaters.

I think
you want 2 L6006C-1018 Honeywell strap-on aquastats for that function, line voltage to start the fan when the SWT hits an acceptable temp. The ZVC can't do that.
