I guess I'm still old fashioned. I like the mashed potatoes piled high with a little gravy lake on top. And please hold the giblets.

    I usually creat a lake on my plate and float mashers, turkey

    Cranberry-Orange-Walnut Relish

    Four navel oranges cut into small cubes.

    One or two bags of washed select cranberries, chopped in a food processor but still recognizable.

    A half cup of chopped walnuts or pieces, toasted.

    Mix all in a large glass bowl (hey, that is what we have!), with about 1/3 cup of Real Vermont Maple Syrup (tm)

    Tastes great the moment you make it, but let it chill overnight with an occasional stir, to meld the flavors.

    don't fprget that after 2 days of turkey sandwichs; the carcass can go in a pressure cooker.20 minutes later it is wonderful soup.
    pressure in the pressure cooker is higher than our 1-pipe system,i suspect.

    A game warden was driving down the road when he came upon a young boy carrying a wild turkey under his arm.

    He stopped and asked the boy, 'Where did you get that turkey?'

    The boy replied, 'What turkey?'

    The game warden said, 'That turkey you're carrying under your arm.'

    The boy looks down and said, 'Well, lookee here, a turkey done roosted under my arm!'

    The game warden said, 'Now look, you know turkey season is closed, so whatever you do to that turkey, I'm going to do to you. If you break his leg, I'm gonna break your leg. If you break his wing, I'll break your arm. Whatever you do to him, I'll do to you. So, what are you gonna do with him?'

    The little boy said, 'I guess I'll just kiss his **** and let him go!'

    Take a 2 lb bag of prepared baby carrots, saute medium-low heat in 3 tbsp. butter a few minutes, tossing, until the carrots are "impregnated" with butter. Add some salt & pepper, and in two minutes, pour in a cup of Marsala. Simmer 5 minutes, then add water to just cover the carrots. Bring to a boil then cover pot and simmer until the carrots are fork tender. Remove lid and crank up the heat until the liquid is reduced to a syrup. Mangia bene!

    At least a couple of recipes that call for pressure cookers. I think you are on to something!
