What is more important when replacing a boiler for a one pipe steam system? That my contractor is Nate certified in Hydronics or his experience with steam boiler / radiator systems?

Ask to see his portfolio. If he is proud of his work he will take pictures. That's one way of separating someone who does this work as their livelihood and someone that does this as their job.
Like the others, I would go with steam experience. Also if they recognise the name "Holohan" that's a good start.

To NATE or not to NATE
As a NATE proctor, professor and one who has seen the good, the bad and the really ugly, NATE certification is a really good thing to look for, but is not intended to replace field experience and expertise. As a matter of fact, the NATE testing process is comprehensive enough that, if an individual is NATE certified, you can be quite comfortable knowing that the individual possesses the "textbook" knowledge of the area being evaluated.
keep in mind that the NATE exams are multiple choice examinations and some individuals are better test takers than others. I have encountered excellent technicians who have taken NATE exams multiple times and have not earned passing scores. I have also had techncians relatively new to the industry pass a NATE test on the first try.
In my opinion, NATE certitification is a great credential, but do not base your decision about whether or not to use a contractor soley on it.
Hope this helps.

nate
I did the NATE ac cert. I am not a smart AC guy, but I proudly know much more than the plumber that knows the difference between a liquid and suction line. Simply put, I know what I don't know.
Nate is likened to going to college: it is a public display that you can think- that's all.
I'm quite sure I've bagged some jobs because of nate.
