Is there a practical limit (or code limit) as to how many boiler and water heater vent connectors can be manifolded together before entering the common vent?

Yes there is. NFPA codes dictate how many and how to do.. The size of the chimney regulates how many BTUs can be vented. Check with a pro or your local code official.
