No problem for a small job. Have used several with no issues. Pipe it correctly and as said in the other post, don't mix heating water with domestic. Some issues may be voiding the warrantee or violating local codes

HW Heater
Would there be a problem using a HW heater as a heat source for a radiant hydronic system?0 -
Potentially a BIG problem--deadly disease (Legionella)--if the very same water is used for domestic consumption.0 -
Dedicate
What Mike means above is that you need to dedicate that heater as the heat source for the in-floor (hydronics) and not use it as your domestic heater also! The Legionella threat is real as even some on this site have had it(it can be deadly)
Also you have to take into consideration the in-efficient nature of a gas tank type heater and the high cost of electric if you go that route. Hiring a professional to at least design and lay out of your system would be money well spent. Also find someone who has in-floor and hydronic experience as there are lots of wannabes out there.
