    size of boiler for bakery oven

    The oven manufacturer has specified the oven needs 220lbs/hour of steam ihn tye bake chamber (intermittently applied). Since this is a process steam application and open ended, do the 'normal' gas boiler specs for a steam heat boiler apply or does it have to be sized differently?

    10 lbs or less. The steam has to be as wet as possible.

    Makes a nice little packaged process steamer. HE series I think. My brother has 2 of 'em for his smoke houses.

    use of steam .......

    this is not for baking then, but for keeping the humidity up while some other type of heating is used to bake? Check with Armstrong they have an electric humidifier that may meet the application. Let them know what type of fuel is available gas, electric and if the steam is to be used in the process and the condensate not returned as it may have to be filtered. Best regards,

    maybe look at small steam generator

    or a small fulton boiler. I think a steam generator might be a good pick.

    The steam is used to make the bread brown better and have a better shinier crust.
