Is it OK to replace about 100 ft of 1-1/4" iron pipe with 1" copper as a return on a steam system in the floor on a slab (no basement)?

No,I would not recommend it. I would replace with schedule 80 1-1/4" welded pipe.0 -

If below the water line
Type L copper should be fine, with the appropriate flushing fittings as you would do anyway. I would stay away from Type M and if I could find Type K, that would be better.
No argument against stainless though! Heck, why not. It would be interesting to see what Fe deposition does to it at least. Orbital welding would be a plus, just for fun! OK, kidding...
But at my heart, I agree with Joe Bertoldi, Schedule 80 steel is a long-lasting traditional approach. I take it that you fully understand that copper above the waterline in a steam system is asking for trouble.0
