Yesterday I got to go to a small warehouse up in Frederick MD and under the direction of a professional brewmaster, make my own beer. They had several books of "clone" beer recipes, from the well known to the obscure. They asked me which I wanted and I knew right away. I discovered a beer when I was in Belgium 2 years ago, made originaly by Trappist monks in the attic of a monastary, called Chimay. Did they have the recipe? You bet they did. They even had the yeast from Belgium needed for this brew, called "trappist" yeast. I was impressed. I measured and mixed the grains. Ran the grains through a cracker to release the innards, put them in a bag and then into a kettle of hot water like making a 5 gallon pot of tea. Later I added the malt and them the hops to the simmering brew, dis-infected a plastic bucket and poured it all in. It was a rich dark brown, just like the brew I remember from Belgium. The whole process took about 2 hours. They store it for me while it ferments and the I go back in 2 weeks to bottle it. They provide the bottles and all the ingredients. They even clean up after me.
