what should the stack temp be for a hot water boiler 125000btu

depends on the manufacturer of the boiler .
each combustion chamber has its own configurations... so the best answer might be as low a temp as you can keep it while not violating the requirements of the type of boiler and the stack material itself.
there is something to be noticed too in the mix...this boiler has an in put and an out put....the output of a boiler can have some degree of variation with some fuel types... and the boiler may even have ranges for certain fuels of variable levels of refinement...that too can change the characteristics of the burn....within the range.hence the stack temps...vary *~/:)0
