The class and category listing of your boiler will determine the construction and materials of the venting system.

Regardless, the boiler manufacturer's recommendations trump all, as you know. Distances to combustibles is but one consideration. With dual and even triple-wall breeching assemblies, this can be narrowed significantly.

Stainless is just a material but it shows up across most of not all categories. Category and class trumps material but there are plenty of stainless offerings for oil and gas.

    I have found quite a bit of information about stainless steel smoke pipe for gas burners, but I am curious if there is some reason that it cannot be used for oil burner installations.
    If it can, can anyone point me somewhere that they sell the product and know enough about it to provide advice for an oil burner application?
