it's more than a couple years old.PSC motor,Electronic igniter,Cleancut pump,7184 or Genisys control etc. Totally different than 5 years ago.

Most efficient?
If I were to install a Smith G8 gas boiler now when gas is low (compared to oil), could I install my good condition Beckett oil burner onto the Smith boiler when oil is lower than gas?
Would this be the most efficient method?

I wouldn't do that
Get the burner from Smith- it will be perfectly matched to the boiler- and have a pro do the changeover. This way you know it will work.

It looks like the Smith 8 boiler is the same for the gas and oil burners.
What is the difference between my current burner which probably wasn't made for my Peerless boiler and a Smith burner that would make the Smith burner better? I admit I don't know anything about burners except the electronic switch my burner man showed me. But I learn fast - correctly, I hope.
I will look for a Smith boiler.

The difference is
that the burners supplied from the factory are matched to, and certified and guaranteed to work on, that boiler. So there's no guess-work, and we know it will perform well.
