My boiler is piped primary-secondary with three zones. One is to a Taco radiant mixing block, 2nd is to baseboard, 3rd is to DHW indirect tank.
How do I wire the primary boiler circulator to a Taco 503 relay to turn on when any of the three zones come on?

Check Tacos web site they have excellent wiring diagrams in the
offerings that are available.
have you considered domestic priority over ride?...its "In There" *~/:)
Taco is a great company they do a lot for the industry to make products available that might be breezed by were it not for their commitment to the community.
depending upon the amount of zones off the RMB you might want to gang all of them under a green Taco ZVC control...as well,...
