One also wonders why real estate listings have a special box just for buried oil tanks.......

I don't want to do it, but I know of one that got buried.

This was new construction, in an "inspection-free zone."

Is it legit under code to bury your fuel oil tank?

Yes

if the tank is approved for that use and it was done according to code and manufacturers I&O manual. Anything else is just trouble waiting to happen
