Steam Heat Questions Function of Gauage Cock and...

I am going to try and restart my Weil-McLain EG steam boiler. The contractor shut the system down to add a new radiator and has been MIA in getting this system back on...
I assume, Fill the water up till the middle of water gauage but I do not understand the function of the gauge cock, two black knobs on the top and bottom of the water gauage. Do i need to adjust it?
Also, the contractor never installed the radiator, but the piping is there open, can i just cap it the thread pipe and start the boiler?
Any additional tips would be greatly appreicate it. This is my first home and it has simply been a nightmare....

Don't worry about the knobs at the top or bottom of the gauge glass.
Yes, you can cap the open pipe for now to get the boiler started.Steve from Denver, CO0
