pilot is the one that came with the boiler so it needs to be left alone. The size is related to being able to get proper igniton of the burner and also to be able to keep the safety engaged and operating.
It is better to leave your pilot burn 24/7 as it does help to keep the inside of the boiler dry during the damp, humid summer months, I assume your boiler is in the basement and like most basements they are damp.
If you want to save maoney make sure your steam system is set up correctly. A good book for you to buy is Dan's Lost Art of Steam Heating over on the left side of the screen at Books and More.
It is also a good idea to have a professional do a combustion test on your System to insure good efficiency and safety. Hope this helps.

I have a Burnham Steam Boiler, 19 years old and I love it.
However, the pilot light is very large. I was told that I should not shut it off in the summer because of potential condensation - is this true? Also, any recommendations to what type of replacement that will give a smaller flame to save money?0 -

I'm a homeowner, not a pro.
That said, I believe best practice is to leave a standing pilot burning (based on a pro's advice & my earlier experience).
As for the second question (how to make the flame smaller), again, ask a pro - something tells me it's the size it is for good reason. Anyway, if you don't know anything about gas, pilots, & burners (as I don't), you really don't need to be messin' with the bees.
I will say that often times gas company employees are not the sources of wisdom we would hope to find. Once again, try "Find A Pro." Perhaps this non-answer of mine will bump you up top & get you a better (knowledgeable) response.
