I need to find a good digital stat that will operate with Taco three wire zone valves. Any suggestions?

You mean you don't want those 70's style White Rodgers thermostats? ;-)
They also have a digital version.0 -
Honeywell Focus Pro 5000
is the way to go. Small stat, battery operated or can have a common wire connected, can be configured for a heating only system and use of 2, 3, 4, or 5 wire zone valves.
Just make sure you set the cycle rate for 3 when your in the installers setup.0
