Probably the burner & orifice need cleaning/adjusting... I would do that first, check all the other burners.. check the manifold pressure etc. If not your area of expertise, have them call a gasfitter. (liability, liability, liability!)

    Pilot blows out on Wolf Range

    As I was finishing servicing a fire suppression system in a resturant today, the owner brought out a thermocouple to be installed. The pilot did not work and as I had fixed the same problem 3 years ago, they thought they could save a few bucks by getting the part themselves. I lite the existing thermocouple, and it immediatly worked. Then they turned on the oven thermostate control and the pilot went out. I lit the pilot 3 times, turned on the oven control 3 times and 3 times the pilot went out. Each time, the flame went out, the flame on the left side of the pilot went out first, then the right flame went out. I seems as it the Burner took all of the gas needed for the pilot. The pilot flame impinges on the thermocouple about 1/2 " and glows dull red. (Thanks to Tim McElwain) My first thought was the tube supplying the gas to the pilot is obstructed. I tried to remove the tube, but the nut was rounded off. I thought about removing the FMDA safety so I could safely remove the fitting, but thought it was time to ask more knowlagable people for advice. This is a Wolf oven, with a FMDA safety.

    Any thoughts on this problem. My very limited experience w/the safety valve is they are normally very trouble free. I do not want to replace the valve unless needed.

    I had this happen to me at a bakery in Lowell Mass. My in-laws of course . Couldn't find it till they mentioned the hood system was just inspected called the guy back he adjusted the Ansul valve end of problem You got to love it when they buy their own parts though.

    I did not even think to look at the shutter. Those shutters are often occluded with dust and grease. I will look at that tommorrow.

    I do not know how to check for the gas pressure or flow. There is another guy who does commercial gas appliance repair, but he does not advertise, have business cards, a business phone or even answer his phone. We also have a guy who does residential but will not even look at a commercial gas appliance. I am by default, the only person around who will look at gas appliances. If I cannot figure out the fix, some of my customers have bought new appliances. If there was someone who did commercial work, I would be pleased. I got into the repair just because no one else did. Do you have any reccommendations at to any service manual I could get? I do have the book by Don
    Walker, and it has helped a great deal.

    you can also try looking for grease covered pilot adj screws sometines they are at the burner end

    There is also a company in TX the only one, that can rebuild the sensor tube if this model has one or the whole valve assembly if needed, cause when you see the price of a new one....
