I'm just a homeowner like you, but I bet the Pro's would appreciate a picture or two of your boiler and the piping near it.
My best guess is that the near-boiler piping is not correct and hence the steam going into the system is wetter than it was before. However, pictures (particularly of the header above the boiler) plus measurements would probably help the pro's the most.

New Boiler, Now Radiators Screaming
We got a new steam boiler last week, a Peerless EC model. It now vents out the side of our house, while our old one was chimney vented. Boiler seems to be working fine, the house is toastier than ever, but the radiators noise level (all of them) has gone WAY up. They have been screeching, hissing, and gurgling incredibly loud since the install. The hissing is so loud it is unbelievable. It sounds like they might expode sometimes it is so sudden and is keeping us up at night. Prior to this, we had an occasional hard knock or bang, but this is different. It is sudden, squealing, and sounds like little valves inside the the radio are opening and shutting or something. It sounds kind of like the noise a bus makes before it takes off. Then, it stops as suddenly as it starts. Installer is coming out today, but I thought I'd get your ideas as well. Thanks!0 -

Yeah - check the pressure. Gauge may be off, put on a test gauge. Easier yet just jack the fast-fill up to 20 for a quicky amazing fix. You could get lucky. Good luck J
EDIT Woah!!! Missed the part about steam!! Thought it WAS HYDRO. Get the pressure down!! check the firing rate!! Sounds like overfiring. Good luck J Pressure should be set under a #.0 -
cleaning
The system's full of oils and impurities. All new piping and boilers contaminate the water. The contaminated water creates "wet" steam, causing havoc throughout the system. The boiler will have to have a surface skimming or even a controlled surface blow-off. These processes take TIME.
Check the manufacturers recommendations on cleaning the new boiler. Furthermore, the impurities and wet steam have now released sediments from everywhere in the system. Bright side: when all's completed, you'll have a very clean and efficient heating system.

If everything is piped properly it sounds like it needs to be skimmed/ cleaned or the pressure may be too high as everyone else said.
