and does higher venting give me more heat, or less?

We have Dole Vari-Vents on our steam radiators. They have settings of 1-10.
We are getting too much heat in one 2nd floor bedroom. Do we set them at a higher or lower number to cool things off?0 -

To be more clear, there may also be a "Faster-Slower" indicator reflecting the speed of venting release. In my experience, the higher the number the higher the venting.
Personally, I like TRV vent valves (Macon, Danfoss types with integral vacuum breakers) so that the denial of venting is based on space temperature.
But, you did not ask me that, so working with what you have, play with the vents.0 -

If air cannot get out, steam cannot get in. More air out, more steam in. Less air out, less steam in. This is why those TRV vent valves work so well responding to space temperature.0
