or spectrum of why and why nots.
why not includes wrong boiler wrong nozzle wrong fire chamber wrong stack, wrong oil pressure ,wrong combustion air ,wrong stack temps to name a few....and the whys are at least as numerous starting with type of oil,..... oh , and equally unlikely to give you an answer.
in that the range is fairly large, and the newer modulating boilers are great at saving on fuel useage, you would want a more accurate answer that would be useful when considering your purchase.
Let me quick roll an example, place has two large boilers with a 125 gallon a day fuel habit. we size the boilers right change the stack ,add combustion air...now has three boilers whose combined thirst is 49 gallons a day same outside temps . you are better off with not going by what may be "There " perhaps it is way more than you really need.... there are a lot of good experienced individuals here ,someone may live nearby, should you be looking to change out your existing oil boiler and install a new boiler the correct size with the work done in a professional manner ,up to or better than, current codes, then look at Find a Professional on the left of this page.
then if one of the why nots lunges out at them, it would be sorted out in a flash and you would save a group of conjecture.... and Dollars in the long haul...

oil to gas
Not sure the nozzle size as you wrote it, but never match a new boiler to the size of the nozzle in the old one. Do a proper heat loss to determine boiler size for hydronics, or measure connected load for steam. How do you know the old boiler was the right size to begin with. Too many variables to answer you question otherwise. I assume you mean a .75 GPH nozzle.....at what pressure is the burner operating and is it fired to max? Use the heat loss method. Better yet, have a pro do it for you.

Why
do you want to switch fuels in the first place? Have you calculated the cost per BTU of oil vs. gas in your area? Gas is way more expensive in many areas this winter.....
