Hi. I don't know much about the radiant in-the-floor heat. I am used to fin/tube baseboard. Would the in-the-floor heat work OK through 1/2" floor, 1/2" carpet pad, and 7/8" carpet. I would want to "retrofit" it under the joists. Also, what would work better, just staple-up or using the heat transfer plates? Thank you!

You're asking a lot
that floor assembly and covering equals about an R-4.6. Depending on what kind of heat load you have, don't expect much output with that much insulation on top.
With 140° supply, about max. for most plywood contact, expect about 12- 14 BTU/ square foot output, according to the RPA RadPad.
How is it you have only a 1/2" plywood subfloor. Seems thin, unless your joist are on 8" centers
