Why brass?

In this link concerning hooking up a vaporstat it says to use brass fittings. Why? Would it be to stop a galvanic reaction or for some other reason.

    Brass or bronze? Union?

    I see that actually say bronze...I bought mine brass. Is that OK. Also, I put unions at both the top AND bottom of the pigtail thinking I could take off both controls and not have to worry about removing the pigtail. Is the illustration a way better way?

    but I don't think I've ever seen a bronze pigtail; it's usually red brass.



    And the reason isn't a galvanic reaction problem, it's that iron will rust and plugs up much more quickly and is harder to clean. 



    Unions?  I love them.  Makes life so much simpler...
