which I have strapped to the radiant supply manifold always reads 10 degrees hotter on the screen than the probe thermometer I have next to it. There is insulation around the sensor. What should I look for?

Check the resistance........
...........of the sensor itself. It's a typical Tekmar 10K resistor.
