Banging Pipes in Steam system

Replaced original boiler (oil) in a 1925 home and switched to gas boiler. Original boiler had minimal or no noise. New 'energy efficient' gas boiler system is producing a lot of very loud water hammering in specific areas. What happened in the transition to cause this?

Ferret out the steam
Either poor near boiler piping allowing wet steam to leave the boiler room or the boiler water level altitude was lowered, thus uncovering previously wet returns to inquisitive steam.
Those are the two first things that popped to my mind

steam air valve
noise of Steam coming from radiator was very loud so I changed the valve and is now worse and also the valve will not close will remain open during the time that the heat is on
what can I do to fix this noise problem..specially at night
